image out of .cr3 less sharp and less saturated as image out of jpg

When I generate an image out of .cr3 files the result is less sharp and less saturated as an image out of .jpg files (see attachment). Where is the problem?

May I ask a couple of questions to understand it better:

1. Jpegs: how were they created? Did you shoot jpeg or converted raw to jpeg before processing?
2. Jpegs: did you apply any kind of sharpening before rendering stack in HF?
3. Cr3 stack processing: please let me know what codec is selected in Raw development settings.
4. Are you opening images if HF directly or exporting from LR or CO?

1. The jpegs are out of cam. I shoot RAW and JPEG
2. I did not apply sharpening. I show the jpeg parameters in the attachments
3. see attachment
4. I am opening images in HF directly

If I convert the RAWs (Canon Compressed RAW) by hand with Adobe-DNG-Konverter the DNGs look exactly like the original RAWs.

Your jpg's are sharpened in camera, note the 4,2,3, under the Strength, Fineness, and Threshold icons, these are "Unsharp Mask" settings/features. And, although contrast, saturation, et al. are at 0, there is still some applied to your jpg/heif files. That is why your jpg has better color tone compared to the Raw. You probably already know this, but it bears repeating for others, those settings only effect jpg/heif files and not Raw. Raw files are pretty flat and generally need post processing.
As for the Digital Negative (DNG), my understanding is they should look just like a Canon Raw when converted from CR3 to DNG. I hope Catherine can explain this further (how HF uses them) because I don't use DNG. I think they are for post stacking export, but I could be wrong.
BTW, I noticed you are using PSP. It will import DNG files and allows you some control during the conversion. It also has camera profiles and lens correction. It saw my R5 and RF 100mm macro from the EXIF data and loaded it.
