So far I have considered photographs moving the camera in one plane, but presumably larger objects will need motion from side to side as well as to and fro. Can Helicon focus cope with photographs from two planes?

No, the program is designed to merge the images shot from the same point or axis.

But you can use other panorama stiching programs to combine merged images to pano.
