Quick focus selection

Is there a quick way to select from camera and to infinity and then let the program auto select the number of images?
If not it would sre be a handy addition for landscape phoyography.

If you're asking whether there's a quick way to set the start and end point automatically - sadly, no. There is no feedback from the lens to the camera, so we don't know where the start of the range is, where's the end, or how many focus steps there are front to back.

The next best thing you can do you can do is untick the Auto mode, rotate the lens to the near position by hand, enter the number of shots and press "Start shooting". You do not need to lock the points if you specify the interval and number of shots by hand. You only need to experiment once to find the numbers that work for your camera and lens.

Maybe I've been looking in the wrong places but, I have been unable to find definitive information on how to work out "the interval and number of shots" required.

Basically, by trial and error / by eye. Find out what your DOF is at the close to camera distance (again, by eye) and set the interval to a number slightly smaller than that (20-30% smaller). If your stack comes out with blurry bands you need to reduce the step size (and increase the number of photos proportionally).
