is the performance for stacking more dependent on the count of CPU or GPU cores?
I am considering to lease a new mac studio and there are several options available....

That depends on your images (format and resolution). If your images are in raw format, more CPU power is better. If it's JPEG or TIFF, then either more GPU cores is better, or you won't see a meaningful difference either way (because the focus stacking itself is very fast as long as the GPU is decently capable).
