I don't know whether or not 2:36 is the expected performance for you stack. If you can upload it to our private storage we'll check the performance on our systems. But processing raw files requires an order of magnitude more computation so it runs an order of magnitude slower, no surprise there. We have optimized our code to the best of our ability, and we cannot make Adobe optimize theirs, it works the way it works and that's it, it's a black box. But we don't have any specific reasons to believe that their code is not well optimized.

Will Helicon be releasing an update to our current Helicon software, or do we have to buy a whole new version to be Apple Silicon Compatible in 27?

It is a free update, as our policy has always been and still remains.
