I ran check for update twice on 7.6.1 after learning that 7.6.3 was available on the HF site.
Both times I was told that HF was up to date.

That's right, autoupdate to v.7.6.3 hasn't been enabled so far intentionally. The latest version is available for download from our website: https://www.heliconsoft.com/software-downloads/
