Can I use this software on an iPhone 13 to control either a D750 and/or Z7 Nikon?

Yes, you can control both, using Wi-Fi as well as USB connection (the latter requires the camera connection adapter). USB support is experimental for now and there may be issues with it, Wi-Fi is more reliable for the moment.
