New macbook - Help for ressource planning

Hello to all !
I currently have an old iMac with Intel processor that is starting to show its age. It is still working fine but looking for an upgrade. Looking at the MacBook Pro Lineup and looking for some help on choosing the best ressource combo.
I do use Lightroom classic and some photoshop but really enjoy macro/focus staking. Been using Helicon software for my stacking with great success and trying to understand the how the software works best to plan the hardware selection of the next computer.
I was planning the biggest configuration of the M3 Max with 36 gig of ram. Just wanting to understand the memory requirement that would best fit for staking requirements. For sure more is most often better but would like to "contain" the cost but make a sensible decision. Just trying to see if this would get me going for a little while or really better off to move to the max chip and dish out the money and step up to the 48gig config
I guess I am asking at what point does it become a diminishing return to spend to add hardware/ressources versus the the benefits
THanks
