Does Helicon Remote lock the mirror up during the stack acquisition?

Yes, Helicon Remote support MLU during shooting. You should select this option in the camera settings and enable option in Helicon Remote preferences for Canon cameras.

Is there a way to manually force helicon remote to be in mirror lockup mode since it currently doesn't detect mirror lockup with the canon 7D?

You probably don't have the latest version. Please install the beta version from here:
